Pumpkin Pie

A traditional pumpkin pie, taken from a Laura Secord recipe book. Me Mum uses brown sugar.

Directions

  1. Preheat oven to 450 degrees
  2. Prepare sufficient pastry and line a 9- or 10-inch pie plate. Trim, flute edge but do not prick.
  3. Beat together
    • 2 eggs
    • 1 cup milk
    • 1 can (14oz) or 1 1/2 cups pumpkin
    • 1/2 tsp salt
  4. Mix together and stir into the pumpkin mixture
    • 1 1/3 cups lightly packed brown sugar OR 1 cup granulated sugar
    • 1 tsp cinnamon
    • 1/2 tsp ginger
    • 1/2 tsp nutmeg
    • 1/4 tsp cloves
  5. Pour into pie shell
  6. Bake in 230°C (450°F) oven for 10 minutes. Reduce heat to 175°C (350°F) and bake for 45 to 50 minutes longer, or until almost set.
