Pumpkin Pie
A traditional pumpkin pie, taken from a Laura Secord recipe book.
Me Mum uses brown sugar.
Directions
- Preheat oven to 450 degrees
- Prepare sufficient pastry and line a 9- or 10-inch pie plate. Trim,
flute edge but do not prick.
- Beat together
- 2 eggs
- 1 cup milk
- 1 can (14oz) or 1 1/2 cups pumpkin
- 1/2 tsp salt
- Mix together and stir into the pumpkin mixture
- 1 1/3 cups lightly packed brown sugar OR
1 cup granulated sugar
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- Pour into pie shell
- Bake in 230°C (450°F) oven for 10 minutes. Reduce heat
to 175°C (350°F) and
bake for 45 to 50 minutes longer, or until almost set.
